  CAPTAIN HYLTON & CHEF/MATE AMY

  After spending just a few minutes with Hylton and Amy, you will pick up on their passion for the ocean. Growing up on the East Coast of South Africa meant their childhoods were both full of outdoor adventures, with family and friends, along the coastline. Hylton and Amy have spent the last 12 years together on the ocean running SCUBA trips, spearfishing trips, whale swimming trips, line fishing trips, as well as term and adventure yacht charters. Four of these years were spent living in the remote islands of Tonga in the South Pacific, which has taught them a lot about enjoying and appreciating the simple things in life. What they enjoy most is sharing their passion for the ocean with others, those new to it and those who are already ocean souls like themselves.

  Hylton has covered many miles in his sailing career, which started 10 years ago, delivering sailing yachts from South Africa to various parts of the world. Hylton is a certified freediver, SCUBA dive master, in-water whale swim guide, and RYA yacht master. The minute you meet Hylton, you will catch on to his passion for spearfishing, fishing, and freediving. His charisma and enthusiasm will make everyone feel at home onboard. He is an extremely competent Captain and a water guide, and will be sure to share any knowledge about freediving and spearfishing with those who are interested.

  Amy is a certified Rescue SCUBA diver, freediver, and in-water whale swim guide, and has her honors degree in Marine Biology. Her passion and bubbly personality make her an instant hit with guests. She has completed 2 Atlantic crossings and has thoroughly enjoyed living on and around the ocean for the last 10 years. Through their travels, Amy has picked up recipes from the South Pacific, Indonesia, South Africa, and the Caribbean that she will share with you during your stay. One of their favourite parts of their lifestyle is being able to selectively catch what they cook and create fresh and delicious meals onboard or over a beach bonfire.
  The crew cannot wait to have you onboard. There will be many stories told and laughs had, but most of all, they cannot wait to share our beautiful oceans with you.

  2025/26 STEWARDESS CANDACE

  With a degree in Zoology and Conservation and a deep-rooted love for the ocean, Candace brings a unique blend of adventure, knowledge, and fun to their role as First Mate. Whether leading a thrilling tubing session, teaching guests how to carve on a wakeboard, or guiding a peaceful paddleboard tour at sunrise, they love helping guests connect with the water in a way that’s both safe and unforgettable.

  When not on the water, you’ll likely find Candace behind the bar mixing up a fresh cocktail—or a mocktail—always with a creative twist and a smile. Their passion for hospitality shines through in every detail, making sure guests feel at ease, well cared for, and thoroughly entertained from the moment they step aboard.
  Friendly, attentive, and always up for an adventure, Candace is committed to delivering 5-star service and creating memories that guests will carry long after they’ve left the islands.

  New Years Charter 2025

  I could not have imagined a better trip for our family. We will be forever grateful for your care of us from the wonderful meals, to the itineraries, and of course the water sports adventures. All the boys were able to do and enjoy exactly what they wanted on this fabulous boat. We couldn't have been more comfortable. The rooms are so well appointed, the boat trip was so fun, and the meals-better than any restaurant. It is hard for us to leave. Colt learned so much and will forever be called "Sea-bob." George and I were able to recharge our batteries to start the new year. Our New Year's Eve will forever be a top memory.

  Spectacular Week

  Thank you for a truly spectacular week on C'EST LA VIE! We appreciate everything you all did to make our week so special. Captain your itinerary was perfect for our group (the Baths adventure, some bar hopping stops and the quiet coves where we could relax and play on the top notch toys). Chef, your menus were absolute perfection: beautiful to behold and even more delicious to eat. Our food photos from the week will make us all instagram famous! And sweet Stewardess, with the amazing cocktails, and attentive service. How will we find our sunglasses without you??

  Thank you for a wonderful week that exceeded all expectations. We knew we would see many beautiful locations, do some fun snorkeling and paddle boarding, and enjoy being pampered, but you three made this trip all that and more. From story time to the meals, to the drinks and beyond-everything was spectacular. Add to that our first SCUBA experience and a host of other great opportunities, and it makes us want to do it all over again right now!

  We Will Never Forget

  Happy New Year!!! You three are an amazing team that exceeded so many of our expectations for this trip. We came as two families but are leaving as a family with 3 new additions (you guys). Together we started our days off, ate together, played together, explored together, relaxed together, joked and played music together, watched sunrises and sunsets, and re-generated our "batteries" so we could head home to work and think about how to get right back to the islands. You each bring so much life, adventure, and top-notch service to create a special environment for us. This is certainly a trip we will NEVER forget. If you are ever in the states near Washington D.C. please look us up... we'd be so happy to treat you to some of what makes our home special.

  An Amazing Week

  What an amazing week. You looked after us all so beautifully. Always smiling, always making our days full of fun and making it seem so effortless. It is all appreciated and we know that it actually takes masses of work. Thank you. The food was sublime -  best in the BVI. The drinks were perfect and I loved the surprise every evening. Heres to another year.
